Manual harvest, soft pressing. Pinot Noir is vinified in pink, leaving the skins in contact with the must for 10 hours. First fermentation in steel tanks and aging in the same tanks for 7 months at controlled temperature 16°/18° C. Second fermentation in the bottle for a minimum of 24 months. The Liqueur d’expédition is made from Chardonnay wine aged in French oak barrels and cane sugar.
